The recipe for a classic homemade apricot jam
1,250 kg apricots
400 gr water
600 gr sugar
Wash the apricots, split each in two and remove the nut. Place the fruit in a suitable pan.
Break some of the apricot nuts, take out the almonds, scald them in boiling water and then chop them into small pieces and add the to the apricots.
Add the water and cook on a low flame until the fuit is soft. Add the sugar and the juice of the two lemons. Mix until the sugar has dissolved.
Bring to the boil and cook for 15 minutes. Check the cooking and if necessary continue alowto boil until the correct consistency has been reached.
Pour the mixture into the jar, cover and label the jam. Keep 2 spoonsful to one side for an Apple crumble!
