Pane con uva passa
380 g flour 00
one packet of dried yeast
1 teaspoon sugar
125 ml lukewarm milk
3 tablespoons cold unsalted butter
125 g sugar
3/4 teaspoon salt
1 teaspoon of cinnamon powder
1 spoon of nutmeg powder
175 gr raisins
1 large egg lightly whisked in a bowl.
Put 50 g flour, sugar (1 tsp white sugar) baking powder and warm milk in a bowl and stir well. Leave on one side until the mixture becomes foamy.
With your fingertips work the butter and remaining flour, brown sugar, salt, spices and raisins. Add the egg and liquid with baking powder. mixing well with the fingers for at least 5 minutes or use a mixer until you get a homogeneous dough soft and elastic,
Cover it with a cloth and let it rise until it has doubled its volume. then on a floured plane knock it giving it the shape suitable for a mold for plum cake or loaf.
Close or cover the mould with a sheet of greaseproof paper or greased foil and let rise again until 2.5 cm exceed the level of the mold.
Turn on the oven and heat it 180 k. brush the loaf with slightly beaten egg and bake for 35-40 minutes until well browned bread crust.
Leave it to cool for 6 minutes into the mold and then turn it on a work surface and let it cool.
