This is my New York recipe for pancakes. Among the ingredients there is buttermilk. What is it? You will find it in all shops which sell ethnic foods and other treats, or you can do half and half ' milk yogurt, Greek yogurt if it is better. I use it often in muffin recipes, salted or sweet, and in my ciambellone cake with egg and olive all oil.
1 cup flour 00
3/4 cup of wholemeal flour
2 tablespoons sugar
2 teaspoons of baking powder
1/2 teaspoon of baking soda
1/4 spoon salt
1 egg beaten lightly and not cold
1 cup and 1/2 of "buttermilk"
3 tablespoons peanut oil.
Maple syrup at will
In a large bowl mix sugar flour baking powder and baking soda, and salt. In a different bowl, the buttermilk.
After you add the egg mixture and buttermilk and oil to flour and mix well with electric whips. Now we're ready to bake.
The most important thing of pancakes is to not burn them, so I'm not too thin and not too thick. Therefore the exact measure is a little less than a soup ladle.
For each pancake will take a finger of melted butter and non-stick pan, then it's time to cook each pancake. One minute on each side. keep covered and turn on the other side of ... and 'fatto!!
I forgot, for those who want to try to turn the pancake by tossing the "pancake" do try . I know for those who are attentive to their diet pancakes are not quite the ideal meal but we like them so much we prepare them at will .. even salted versions.
